Introducing AYO's Four Hands Series: South America - a intimate Chef's Table Experience at Counter 71 in East London

Hosted at Counter 71, located off Old Street in East London, AYO's unique dining experience is for guests seeking an unforgettable culinary journey. At the core of Counter 71 lies an intimate 16-seater chef's table, overlooking an open kitchen where guests can witness the artistry of chefs preparing a multitude of 10 omakase courses paired with wines.

About Adrian Hernandez:

Pursuing a career in the footsteps of his father, Adrian  at a very young age started as a porter at The French Laundry. Eventually Corey Lee caught on that he was interested in moving into the kitchen and over 6 years worked alongside him, honing not only skills but  attributes such as discipline and attention to detail. To do things right the first time is something that was  drilled into him. 

Eventually Adrian came to the UK and worked at  Restaurants Such as Chiltern Firehouse, Luca , Smokestak and now is Senior Sous Chef at 1 Star Michelin Humo in Mayfair. Growing up in a Venezuelan household, Adrian was oblivious to the culture and it wasn't until he made a trip to  Venezuela at the age of 19, that he spent 6 months  that he learnt what it meant to be Venezuelan - the  culture, the people, and most importantly the food. Ever since then, he has tried to incorporate and  demonstrate his roots in combination with the culinary journey he has taken. 

The menus share a collaborative story of AYO's Angelo Gonzalez and a guest chef, showcasing the diversity and richness of Colombian and Venezualan cuisine, featuring staple flavours and dishes such as frijoles and arepas with a modern and progressive twist that reflects the chef's culinary philosophy. Each dish is a fusion of flavours and techniques that highlight the cultural heritage of the chefs, Angelo Gonzalez and Adrian Hernandez who collaboratively create a unique tasting menu that promises to delight and surprise diners.

We are proud to announce the wine pairings will be provided by Justerini & Brooks. Justerini & Brooks, established in 1749, is well-known for being one of the largest importers of fine wines from the top estates of Germany, Burgundy and Barolo and now has exclusivity for Diageo’s rare whisky portfolio, including the Port Ellen and Brora distilleries.  The wine pairings will explore their collection that's dedicated to unearthing and championing young, new talent as well as offering its customers an extensive range of immediate drinking wines.

NOTE: We may not be able to cater for all dietaries as this is a set tasting menu. Please email us if you have any questions before booking your ticket.
